Lefse

I am in a cooking group and we meet once a month and cook something.  Our first project was Pimento Cheese.  I forgot to take pictures of that effort, but I was prepared for the Lefse.  It is a very thin potato crepe.  It isn't a crepe, but that's what it reminds me of.  Anne led this cooking adventure and she came prepared with special tools and potatoes that had been boiled, riced, and chilled.  

This is a rolling pin with little ridges and a Lefse stick.

I want a Lefse stick.  It was quite a handy tool and I think it would be useful for many things.  

Anne carefully added flour to the potatoes and then we made balls exactly the right size.

These were flattened and rolled out until they were almost paper thin.

We carefully slid the Lefse stick under the dough and lifted it to the Lefse griddle.

After it spent a few minutes on the griddle, it was flipped.  

Golden, browned, buttered, and sprinkled with sugar.  It was delicious.
