Pimento Cheese

How did I not know about Pimento Cheese?  I "discovered" it when we went to Charleston several years ago for our niece's wedding.  I've been on the lookout for the best recipe ever since we got home.  Start with roasted red peppers.

Four kinds of cheese, cheddar, cheddar, Monterey Jack, and smoked gouda.

A clove of garlic or two, pepper, and enough mayonnaise to hold it all together.  Take it all for a spin in the food processor and you get

deliciousness.  One of my favorite things is a grilled pimento cheese sandwich .
